I never thought to myself "Hey, i'm going to roast a butternut squash today " until I was presented with the challenge by my random friend. I thought it would be such an ordeal to cook but ended up being SO easy and SO tasty! Here is the simple recipe:
Recipe:
1 medium sized butternut squash ( I got mine for about 70 cents at the store! )
1 tablespoon extra-virgin olive oil ( I just eyeballed it ! )
Salt and ground black pepper to taste
Method:
1) Preheat oven to 400 degrees fahrenheit
2) Halve the squash lengthwise and scoop out seeds using a spoon

3) If desired, peel the squash at this time ( I left the peel on !)
4) Cut into 1-inch cubes and place onto a rimmed baking sheet
5) Toss cubes in oil, salt and pepper and evenly spread them out in a single layer

6) Roast, tossing occasionally until tender and golden brown (about 30 minutes)

BONUS!!!!!! Now if you are really adventurous, why not try to dive into different combinations with this yummy roasted squash? You could make it sweet by drizzling honey and sprinkling on some brown sugar OR make it spicy using cayenne. My friends and I actually mashed it up and used it as sauce on a pizza! You can also follow my lead by creating the best brie cheese and cracker combo too!
