Mochi ( 餅) is a Japanese rice cake made of rice pounded into paste and molded into shape.
Or in other terms... CRAZY DELICIOUS!
For this simple recipe, you will need:
~1 Cup Mochiko Rice Flour (any asian food store will have this!)
~1 Cup Sugar
~1 Cup Water
~2 Tsp Vanilla Extract
~2 Drops Food Coloring ( if you use red, it turns pink!)
Masa Corn Flour is also needed!!!
Directions:
~Mix all ingredients EXCEPT Masa Corn Flour into a glass bowl and wrap with plastic wrap
~Microwave for 5 minutes
~Dust corn flour on a cutting board and place warm Mochi mixture on it
~Cover entire Mochi piece with corn flour and form into a flat square
~Cool!!! Wait 10 mintutes or more!
~Cut Mochi into strips then cubes and coat each side of the cube in the corn flour
The last step is to eat it and enjoy! Mochi tastes great alone or on frozen yogurt. What a trendy, great tasting treat in under 20 minutes!
