I found an AMAZING recipe from A Decade of Cooking The Costco Way that I want to share with you that would be so easy to cook up for any fiesta!
Ingredients:
2 10 ounce cans Rotel Original Diced Tomatoes and Green Chiles, undrained
2 14-ounce cans Reduced-Sodium Chicken Broth
1 16-ounce can of Rosarita No Fat Traditional Refried Beans
1/2 cup frozen whole kernel corn
2 cups shredded cooked chicken
Fried corn tortilla strips or chips (optional)
Shredded Monterey Jack or Cheddar Cheese (optional)
Recipe:
Combine undrained tomatoes and chicken broth in a medium saucepan. Stir in beans and corn. Bring to a boil, then reduce the heat to low and simmer for 5 minutes, stirring frequently. Add chicken and heat through. Serve topped with tortilla strips and cheese if desired. Makes 4-6 servings.
It's SO yummy. An extra tip is to make a flour quesadilla with cheddar cheese and salsa inside and dip it into the soup! Enjoy!
